I've been using Art's Chili recipe since 2009. It's the best!
-
Looks great - glad to see the beans ;)
-
I like beans in my chili as well.
Is Art's recipe on the forum?
-
I hope Chili Master Sav won't mind. I'd like to see if he made any changes in 5 years.
Savannahsmoker’s Mohunken 6 Pack of Beer Chili
Beer: Six Pack of “Guinness, Dark Ale, or Stout”
Meat
3 pounds beef shoulder, cut in large cubes
1 pound veal or pork sausage with sage
1 pound Italian sausage
Seasonings
2 Carroll Shelby’s Chili Kits
2 tablespoons Oregano
2 tablespoons Paprika
2 tablespoons ground coriander
2 tablespoons ground cumin
2 tablespoon brown sugar
1 tablespoon balsamic vinegar
4 tablespoon chili power
Salt and pepper to taste
Vegetables
2 Large Vidalia onions, diced
6 cloves garlic, minced
1 red bell pepper, diced
1 green bell peeper, diced
2 cans crushed tomatoes (28-ounce can)
3 cans diced tomatoes (28-ounce can)
1 can tomato sauce (8 ounce can)
1 4-oz can chipotle peppers in adobo sauce, diced
1 4-oz can diced green chiles
1 jalapeno pepper, smoked, seeded and diced
3 cans dark red kidney beans (15 1/2-ounce)
2 can mild chili beans (15 1/2-ounce)
Extras: Masa to thicken
White Sugar for sweetening
Vinegar for acidity
Salt and pepper to taste
For Serving: Shredded white Cheddar, Salsa, Chopped green onions, Sour Cream, Hot sauce and Corn Bread.
Directions
1. Drink a beer and read the directions.
2. In a large skillet brown the beef with ½ package of chili seasoning.
Drain the fat, but don't go overboard cause there's lots of flavor in there.
3. In a large tall stock pot add the brown beef and two dark beers,
remaining ½ package of the chili seasoning, Oregano, Cumin, Coriander, Paprika and bring to a boil. Reduce heat
Simmer for an hour. Remember to constantly stir the chili.
4. Either, smoke jalapeno pepper over burner or roast in the oven at 400 for 30 minutes. Place in paper bag and remove skin
5. Have a beer to reward yourself for all that hard work.
6. While beef is simmering brown the rest of the meat in the skillet and after one hour of the beef simmering add the rest of the meat
7. Use the same skillet and caramelize the onions.
During the last couple of minutes, add the garlic and saute.
8. Add onion and garlic to the chili along with chipotles, jalapeno, green chilies, all the bell peppers, tomatoes, tomato sauce chili power and 1more pack of chili seasoning. (Everything but the beans)
9. Bring Chili up to a simmer and simmer 1 hour
10. Good time for another beer after all the hard work
11. Add Beans
12. Simmer at least 3 hours.
13. You deserved another beer here

Getting hungry.

That looks fabulous and I do love chili, but I'm only cooking for 2 now and trying to make a smaller amount. I might cut the recipe down some, I have been doing that lately. Pam .☆´¯`•.¸¸. ི♥ྀ.

I think we need more meat???
That's what I think, it is now in litigation with Sweetie.
What to jump and help me in the debate?

I hope Chili Master Sav won't mind. I'd like to see if he made any changes in 5 years.
I sure do not mind but we have made a couple of changes since this was published in a couple of cook books. Here are some of the changes.
Savannahsmoker’s Mohunken 6 Pack of Beer Chili
Changes:
Added 2 pounds of 93% lean ground sirloin for a total of 8 pounds of meat.
Carroll Shelby’s Chili Kits have been removed from the market.
Have not found a replacement so far so ya all go for it and let us know what works for you.
Changed 2 cans crushed tomatoes (28-ounce can) to 3 cans becasue of the added meat.
Changed 1 jalapeno pepper, smoked, seeded and diced to 2 jalapeno pepper, smoked, seeded and diced
Deleted Masa to thicken because it is not needed and also it impacted a little cornmeal flavor.
Changed how we are browning the meat.
In a large skillet brown pork sausage, remove meat and put aside.
In the same skillet brown the pork sausage, remove meat and put aside.
In the same skillet brown the cubes of beef shoulder in all that flavor.
After the meat starts to brown mix in 1/2 package of chili seasoning.
When brown remove the beef and place it with two dark beers large tall stock and simmer for 1 hour.
In the same skillet brown the veal or Italian sausage.
Also start adding a little sugar and salt during the simmer. Sweetie checks and adds every 1/2 or so.
To clear up any confusion I will add the recipe when the revisions are finished

The Carroll Shelby’s Chili Kits are temporarily unavailable as they had a almond product that was not disclosed for those with peanut allergy's. Should be back on the shelf now or very soon.

That's what Sweetie said but who listens to her. ;D

Sounds and looks good! Bookmarked!
-
That sure looks good Art!!! I think I would have to try and cut that down to about 4 quart!! ::) Don
-
I found Carroll Shelby's last week at Publix' s it is is a cardboard box now and not in the little bags. I have not tried it yet but hope it was as good as it was. It was always the base for my chili.
-
Great looking chili. ;)
-
That.... Is a huge amount of chili. When I saw the ingredients I thoight "that has $10 worth of beer in it!"
I'm assuming it's worth the effort and expense. What's the average cost and how much does it make?
-
Bookmarked Sir ;D

Only two bottles of beer go in the Chili the other 4 go into the cook. ;D
Makes about 13 to 14 quarts of Chili. Purchased a 15.5 quart Teflon lined pot mainly for the chili.
We eat what we want and Sweetie Vac Bags the rest for the freezer.
Sweetie nor I do not have a clue of overall cost or average cost. Sorry
-
Wow!!!! Pass me a bowl

Sounds like a great recipe, there are so many good ones out there and not enough days in the week. But I am going to try!
