Let some rib-eyes get to room temperature. Filled up a tube smoker 1/2 way with Stubbs Wood Chips (Hickory-Oak-Apple mix) and fired it up

Set the rib-eyes on for a smokey 30 minute bath

Put a lite coat of thick wooster and a good sprinkling of Sweet Lous Roast Rub

Fired up the Pk and here we go

Here it is

The verdict: subtle smokey flavor. Instead of using evo for rub glue, I was hankerin for a little wooster instead and that really added another layer of flavor :P :P

Man I'm never gonna get my cholesterol levels down looking at stuff like this. Gotta try this one too and I'll have some explaining to do with my cardiologist next time I see him. :P
Steaks look fabulous, nicely done. ;)

Great steak!!! I haven't used any W-sauce as a coating in a long time (except on pork butts as my "glue"). My wife loves to use some when she is eating. Maybe try some on the steak before I vacuum seal and then send it for a swim. That ought to "push" that flavor into the meat pretty well. Worth trying. Thanks for posting, Smoke!

Thanks All. I heard about the Thick Wooster darn near 3-4 years ago and bought 24 bottles off of Amazon. I use a bunch of Texas BBQ Rub and they mix it with wooster to create a paste. It really works well with Fine Swine & Bovine and Phil's Awake a Steak 8)
Hey Paul Hart, the next time you do some beef ribs on your PBC, rub em down with a bit of wooster and then add your favorite rub..you will like the extra layer of flavor :)

Heck LA, I bought so much last 4th of July, I still have bags left at my parents house. When we had the estate sale last weekend, I was asked if the Kingsford was for sale. :D :D
