Title: Bratwurst and Sauerkraut on PK Grill

You need a 10" x 10" alum. pan for this. I had a larger pan and had to "persuade" it into becoming smaller to have more depth of the ingredients. You'll also need to set the grill up for an off-set cook.

Into the pan put 16oz. of beer, 2-3 T of whole-grain mustard and mix well until blended. Stir in 1lb. of sauerkraut with juices. Add a few sprigs of thyme or 1/4tsp dry. Now press 2 lbs. of bratwurst into kraut, and move this over to the hot side of the grill for about 5 minutes or until it starts simmering. At this point move pan to the cool side and cover grill with vents open under cosls and over pan of brats. After 10 minutes flip the brats and cook until they reach 140F  IT. Now you want to pull the brats and place on hot side to brown on all sides. When brown, place back into pan and serve.
We plated ours with pickled beets and of course Slawsa!

Your brats look excellent. Nice set up on the PK.

Smoke the PK is a champ at everything I've thrown at it. With the simple vent placements, indirect cooking couldn't be easier! There is one small thing I wish was different on the PK, and that is that the cooking grate is at the same height of the grill body. If I'm not careful when flipping burgers Bella gets a hot meal! Other than that I would say this grill is darn near perfection!

Looks great I do something close to this at Met-life for The NY Jet games but we put them on Grinder rolls at the end as we eat/drip standing 8)


It really is good & stays warm for hours if it lasts that long.  We use a gas grill at the stadium.

Great looking method. I can see the mustard working in the kraut like that.  I need to try this soon!

need to start manufacturing those pans!  ;) I'd buy a couple!

Gene I believe that is the recommended adjustment method directly from the manufacturer of those pans ;)

Looks excellent and I love sauerkraut! Wife not so much. More for me!
