Title: Leftover Chicken Tortilla for Mother's Day

Mother’s Day was a little different here this year. I usually cook a good meal or we all go out to eat. Our grandson had two soccer games scheduled for Sunday down by Dayton. Don’t know why they scheduled some on Mother’s Day. Our son could make the first game but had to be back to work at 5:00pm; his second game was at 6:30pm. They wanted us to come and meet them for lunch but that would be too long for me as much as I wanted to see the grandson play. My wife drove one of their cars down and had lunch with them and had a couple of hours to shop before the game. They got home a little after 9:00pm.

The grandsons soccer team is doing great, undefeated in their league with one tie. The grandson got a goal in the second game. I think it was a great Mother’s Day for the wife, got to eat out with the kids, go shopping and see the grandson play soccer.

I wanted to see my 93 yr. old Mother so me and the dog went over to see her. I took her some of my leftovers I had vacuum sealed and froze and some good candy. She likes candy better than flowers!

I had an easy supper; I had some of my Mo Rockin chicken left and some flour tortillas so I made up a wrap and had some leftover spaghetti squash. I nuked some asparagus with a little olive oil and Penzey’s sandwich sprinkle for 4 minutes.

I added some Cajun seasoning and cumin to the chicken and browned it up some. It went on a flour tortilla I had browned in my Lodge steel skillet. Then I added some asparagus. I sautéed some onions, peppers and garlic in a little olive oil. I added a couple spoonful’s of sour cream then the onions, and peppers. I then topped all with a good handful of sharp shredded cheddar. Then the skillet went under the broiler to melt the cheese.

The wrap was delicious; a little different for my Mother’s Day meal! I didn't have to eat alone, my faithful dog is always close by. He got some chicken before I seasoned it.

Those leftovers look a lot better than many of my firstovers.  :D
