It was a beautiful sunny day and the evening was even better. Yardwork duties had both of us busy after work so dinner was going to be simple. Sometimes simple is best! I spatchcocked a 4 lb hen, rubbed her down with EVOO, and gave her a nice massage with Tajin Mexican Seasoning. One of my favorites! It's simply dried chili peppers, salt, and dehydrated lime juice. And it delivers a great fresh taste. The PK was started with a small chimney of coal and a couple hunks of mesquite for a bit of extra flavor. A couple ears of corn were cooked alongside the hen and was served with a fresh garden salad. I need to make this more often. It is so basic and so very good!

Looks perfectly done, did you use the grill grates just for the corn or did you sear the bird on them

Mike, I started skin-side down on the GG's to get some nice marks then skin-side up indirect, corn on GG's
and then on little-more rack to finish. These PK's are the cat's meows!

I love the char on the corn too. That brings out the sugars in it!
