Hello friends, this will be my first tri tip on the kamado. It's one of my favorite cuts of meat because of the price and flavor you can get out of it. If all goes well I may mostly retire the old sidebox, I'll keep it for sentimental value of course.

Tri-tip is part of the California food pyramid. I grew up eating it. One of my favorite cuts of meat.
