Using my 14.5 charcoal ring, 221 - 232 for 6 hours.

Wow looks like you could hang about a dozen racks of ribs on that 22 wsm. Is that just one load of charcoal in that little charcoal basket on that 6 hr cook ?

Yep, one load ran out at 7 hour mark. I was already done with ribs.
Set the vents at 221 and didn't touch them until when I had to cover the cooker.

No clutching or BBQ sauce was involved.

I used an Ethiopian seasoning called Berbere. Rubbed the ribs with mayo before applying the rub.

Yep mayo. That color must have come about from orange wood. It was my first time using it, with my usual rib rub. The only change was the wood.
