Fall has arrived!

A day of balance.

Let's see if this actually works..

Ta Da!   :D     Noticing the expiration date - so much for that bread I was going to make later today.


On with a Fall friendly cook.   Smoky White Chicken Chili. (or bean soup for the purists)

The base.

Open and dump all the red stuff in, add Cumin, lots of garlic and White Pepper.

We'll let that cruise at 250° for a while, then add the beans and proteins.

Question is are you a Wiccan or a Neopagan ;) If I did that to my wifes pressure cooker she would kill me ;D Looks like a good start to some 3 alarm chili.

That's my old pressure cooker.   I tossed the lid and removed the handles so I could use it out here.

It will be a 1 alarm chili at best.   Gonna use some tasso to bring the smoke & flavor.

Some smoked chicken, and a package of Tasso I found in the freezer.

Cut up 2 breasts worth, and save the 3rd for chicken salad this week.   I put 3/4ths of that package of tasso in.

I noticed your Knife, They are having a warehouse sale and the prices seem good for the two stikman Zwilling knives.
I am going to get the Bread, Filet, Boning, carving, Santoku and Chefs Knife after I research and make sure I can't get them cheaper somewheres else  :)

I have the breads (big and small), Santoku and 2 sizes of the Chef's knife.   This one is my 'go to'.

I also have a couple Shuns which look cool and wicked, but they dent if you glance at them sideways.

We keep them in a Wusthof block that I bought on clearance.   ;)

I must be the "purist" you're talking about since I don't understand why you would call it chili when it's bean and tomato based and there don't appear to be any chiles among the ingredients.

Nonetheless, it looks like a satisfying soup and I'd definitely be good for a couple of bowls.

I'm toying with the idea of adding some wild rice towards the end, and that would put the kibosh on the 'chili' inferences.


Covered the pot with foil and added a couple ButterBallBabyBoulders - rubbed down with chicken rub #5.

Mrs voted to add the wild rice, so I'll fold that in later to bulk it up, and adjust (kick up) the taste then.
