I had this crazy idea that the Super Pig Bacon Rub would be good on a ham ( hey - I got the idea from Tommy. ;) ) And - I have been wanting try Sundrop as a citrus tasting base ( again..Tommy did it :D...)
So - I bought an 8 lb. hickory smoked spiral cut ham that was not glazed. And then combined the following in a small pot on the stove:
(Pre heat oven to 300F )
2- cups Sundrop
2- tbs Super Pig Bacon Rub
2- tbs Dark Brown Sugar
2- tbs Lemon juice
Bring this to a low boil until volume is reduce by approx. half. Reduce heat to low, Then add:
2- tbs corn starch
2- tbs unflavored gelatin
Stir often to make sure all dry ingredients are dissolved and distributed well. Set aside to cool down some. it should thicken up like almost like a creamy biscuit gravy:

Then apply one good coat, and put ham - cut side down - on cookie sheet and foil tent it well.
Remove ham after 60 minutes at 300F. Remove foil. Re-set oven temp to 425F.

Apply another coat of glaze, and put ham back in oven for 10 minutes. Repeat glazing once more - and cook for the final 10 minutes. Serve it up! Great with biscuits, and a touch of brown mustard.

The tastes of the Sundrop, brown sugar and lemon juice were good - but the Super Pig just added a depth and dimension that made a very "savory-sweet" glaze. Balanced nicely against the salt in the ham.

That is one purty ham!!!! Just makes my right arm all tingly thinking of that bacon rub on ham!!!

WOW...sounds perfect but...I would add a lil bourbon to the mix. my bad. Looks wonderful, I owuld eat that.

Tommy...not all my food..just the stuff that will taste good..you should try my Bourbon Pecan Pie.

I wanna know why is it when someone has a "crazy idea" my name keeps being brought into the thread? 8)
The ham does look good, but i'm doing another Red Neck ham soon and will change up the way I do it just a little ;)

yes I remember Graham Kerr's shows all so well. I would have to say that along with my Grandma those two helped make me the cook I am today. "If you would not drink it then don't cook with it"

Graham sure changed his ways about cooking when they found out his wife was diabetic. I learned a lot from him about how to substitute stuff. I also have a few of his cookbooks. but I loved Justin Wilson. Now he was a good old boy for sure. I gar on tee it. Pam ★*˚°。°

Justin Wilson's father was a petroleum engineer (IIRC) and his job caused him to take the family ( when Justin was 16 ) to south LA - from Indiana....
Justin fell in love with the culture and the food - and really adopted it as his own - and most Cajuns returned tha favor, and adopted him.
His recipes are true southern LA country cookin. Not to be confused with new Orleans Creole cookin -

Justin seemed to be just a real nice guy as well. Even if he was cooking something I was not interested in, I still watched the entire episode. You could never go wrong with his little jokes and funny stories........

My oldest son is named after Mr. Wilson. Kimmie loved to watch him on Saturday morning and fell in love with the name Justin.

From all accts. he was a well liked fellow. He never had any of those "personality" episodes that we have become accustomed to seeing in the news ::)

I can say that I have been to his restaurant when He had one in LA. I lived in Gulfport MS for 2 years in the Navy and got to see a show taped on the back porch. It was a blast. the jokes he would tell when the camera was off for the breaks would have you in stitches.

He was perhaps the master of combining humor, cooking, and he would sneak in a little life lesson on you if you were not careful ;)

Justin Wilson
I was a huge fan. I got to hear him do his stand up as an entertainer a couple of times at conventions. He was even more hilarious in person, on stage than what he could say and do on TV.
He is missed!

Graham Kerr, the Galloping Gourmet
I also, really enjoyed Graham Kerr's cooking shows, especially his last series when he got serious about cooking healthy, low fat, low calorie, high fiber foods. (because of his wife's health)

Pam..I love bourbon in a thick crystal glass. Especially small batch, single barrel bourbon. I also put it in my baked beans.

Thanks for the pics Captain...brought back some memories from quite a while back.....I sure wish I only had good memories ::)
