Title: 54 Hour Sous Vide Chuck Roast with Crash Potatoes and Corn

Dinner tonight is chuck roast. Chuck roast was heavily seasoned with Eat Barbecue The Most Powerful Stuff,
bagged and put into a 130 degree Sous Vide bath for 54 hours.  I fixed some crash potatoes to go along with
the chuckie. I first boiled the large red potatoes in 1 quart of water and added 1 1/2 tablespoons of Better than
Bouillon to the water.  Once they were cooked I smashed and seasoned them with kosher salt, fresh ground
pepper and Italian seasoning.  Into the oven for 25 minutes at 425.  Frozen corn was the veggie of choice.

Chuck roast was fork tender and the potatoes rocked! If we are not having pulled beef this is my preferred way to
do chuck roast and other tough cuts of beef.

Looks very nice Mike! And I agree with you 100% about the economical beef cuts cooked sv! Every time I sv a chuckie and have a tender mouthful of great beef flavor, I think of all those dried over-cooked roasts I struggled to eat as a kid!  :D
And your potatoes sound tasty...I'm going to have to try them! Thanks!

I used the Sous Vide Demi for this one Art. I like it the best for long cooks as I am not concerned about any water
evaporation.

A great looking plate of food Mike!!! I would sure like to try the sous vide but most of the time I don't know what I am having until that day or at the ,most 24 hours ahead! :) Don

Mike that looks great! I need to try this. I went and got my Anova out of storage.

I ordered a lid for my cambro container so I can use my Anova in it. Going to cut an opening that just fits the Anova with a rubber edge seal. Should be able to fit a large chuck roast with no problems.

Looks really good!  Those potatoes are a good idea too.  Any oil or butter on the potato before it make it's trip into the oven?

Yes, I forgot to add that I added EVOO to the baking pan and also to the tops of the potatoes. It definitely helped with crisping the
potatoes.

Sure Pappy. It is the same Cambro clear container that I believe Gene has. I just had not ordered the lid to it finally.

Sure Pappy. It is the same Cambro clear container that I believe Gene has. I just had not ordered the lid to it finally.
I think it is the same one that I have too. And I have the lid
