Picked up this beef loin top sirloin whole cap off at Costco tonight. Was thinking it would work to make roast beef sandwiches on the PBC like the Kentucky roast beef thread, but it looks @Regular Guy used a sirloin tip. Will this still work? Hoping so, I want some of those sandwiches tomorrow!

It will work! But, you do need to pay attention to the direction of the muscle grain - and make your cuts across the grain - not parallel to the grain...if you want tender eatin'! ;D

Nice, glad this cut works and will be sure to cut across the grain. Dinner should be ready around 6 drholly!

I am very curious to see how the PBC's high heat will roast this.

I usually slow cook top sirloin at 225 degrees until 125, rest 20 minutes and slice to order.

Had to cook it a little longer (pulled when the thickest portion hit 132) than I normally would because the wife is pregnant, but I gotta this was the best damn sandwich I've ever had. Made a homemade tangy (Arby's style) sauce that turned out really well.
The sirloin was 6.6lbs, total cook time of 2hr 45mn. Used kosher salt, pepper and olive oil for the rub.

btw, i did notice the 2010 cab, very nice!!!! my wife and i are enjoying a 2010 bordeaux while half watching rerun law and order

The center of the very thickest part got up to 132, so a lot of the edges where in the low 140's (I'm just giving that portion to my wife).

I'm normally a craft beer and bourbon kind of guy, but I sure do enjoy wine from time to time.
