Oh man those look good! The oysters have been really good the last few weeks.  I see you bought the correct beer to go with those as well....

On the walk back to the Condo hit another bar but only had room for 1/2 dozen more.
These were much better the the first 4 dozen.

PS for health safety I only eat steamed so these were steamed on the half shell.

Ya I made it to 73 while riding motor cycles, racing sport cars and as a test pilot in the US Army and I decided not to push my luck anymore. :)
No raw oyster or any raw seafood for me.

In my opinion Apalach oysters are the best there is. The bay was closed the last time were down there and we could not get them. Not sure what part of Florida you are in but if you are ever in Apalachicola try to eat at Boss Oyster, they have their own boats and you can get some that are just off the boat. two years ago we were staying on St George Island and we rode over to Carabelle and found an oyster boat that just came in and he took a shovel and scooped them up and rinsed them off and filled up a big tow sack full. Took them back, washed them some more and iced them down. That was some good eating.

Ken we are on Open Sands beach just west of PC and I agree unanimously for Boss Oyster in Apalachicola.
We use to stay in Bryant House Bed & Breakfast (close now) in Apalachicola once or twice a year.
Great bar and unlike most B&B's this one was a party place.
Oysters at Boss Oyster by the water was a short walk so that was hit each day.
Maybe we will swing by that way on the way back to Savannah.

Ya know other than the aches and pains, being old is not that bad. :)

If we hadn't just returned from two weeks in New Orleans I'd probably be sticking pins in your voodoo doll while drooling over the photo.

I just figure I'm already so far past my expiration date (luck apparently took the place of smart in my case) that it doesn't really matter any more (and it would be really tough living in Hawaii without eating raw fish).

Ya got me.  I meant no raw shellfish,
I can eat the heck out of sashimi and sushi but I mostly sashimi.
Of course this is not going to be the Hawaiian quality,
Sorry

We had a place in Laguna Beach PCB for years. We ate some good seafood down there and some good BBQ. I did have a Weber on the back deck that turned out some good food. Mostly at the beach I was I into some else cooking.

I live less than a 100 miles from Apalachicola and they are the best. I love them raw first, but will eat them anyway. The piece has been so high we haven't had any for a while. Remember the old saying....never eat oysters in a month that doesn't have a "R" in it.  :P

Remember the old saying....never eat oysters in a month that doesn't have a "R" in it.

The saying was true when oysters were harvested from the wild, mostly because of spawning season (when they're not firm and tasty), warm water season (with resulting algae blooms, etc.), and lack of refrigeration. Not so much anymore with science, commercial regulation, and most oysters coming from farms which control water temperatures and often breed non-spawning varieties.

Did not know about the farms controlling the water temp.  If they can do that, well I guess that global warming thing is on it's last legs ! ! !

I spent 8 years on the Chesapeake and they were pretty strict.  Pulling crab pots in the warmer months.  Tonging/dredging oysters only in the cooler ones.

A lot of the Apalach oysters are still wild caught. Every time I am down there you see the small boats with their big oyster tongs digging the oysters out of the bay. When we fish down there we will often snag on a clump of oysters and pull up a couple. They taste really good right out of the water, an intense taste.

I guess akk the oysters in Apalach are considered wild. You are right about eating oysters right out of the water. Most oyster beds are marked, but there are a lot of oysters all around down there. years ago when we got tired of fishing we would stop on a oyster bed and eat oysters. mmmm

We rake oysters in the rivers leading into Ossabaw Sound.
You got it right "an intense taste"
