Wanna thank Art for all the elk meat.
Going with 3.5 lbs elk and 1.5lbs 73/27 gb.
Mixed and cure1 added, in the fridge over night for stuffing tomorrow into 15mm collagen.
Getting some ready for some Owens BBQ Honey slim jims. Meat has been mixed and in the fridge, stuffing/smoking today.

Major brutal weather yesterday. Got the sticks cut and taste tested by the boss. Guess they pass. Vac seal now.

Ditto!
Another good reason to come to Paducah KY 9/22-9/24 is you get to sample all the goodies Rick brings each year! In addition, there will be some 40 BBQ teams cooking tons(literally) of pulled pork, ribs, chicken and briskets as well as 50 or so vendors serving up about every type of food you can think of.

I also got some home (RV) dry cure chorizo being cut and vac sealed. Been testing a new temp, r/h controller.

LOL, Got the chips and burning the manufacturing oil off now Rick. There will be Sockeye in that smoker in the morning :)
