Berkshire St. Louis ribs from tenderbelly.com. I figured I'd have to give em a shot to see if they are worth the money just once. They should be here Wednesday along with my peach wood

Those are some pretty ribs right there. I may start saving up for a rack of those. ;D

with shipping it was just over $60 for the pack (2 racks). I'll be throwing them on some Stubbs charcoal, couple chunks of peach wood, a dry brine, memphis dust rub and my sauce tweaked with some peach beer :P

woohoo, ribs will be delivered today. I'll let one thaw in the fridge and salt them tomorrow evening, leave them salted overnight and smoke them on Saturday. I'll save the other rack for next week :P

Got the ribs in the fridge to start the thaw process. I'm looking to cook a rack on Monday and the other on Tuesday morning to bring into work. Tomorrow I'll rub them both with Kosher salt and leave them overnight. Monday I'll rub them both with Memphis Dust, cook one rack and place the other back in the fridge overnight. :P

took the Berkshire ribs out of the cryovac and started the dry brine process...
