Title: Who says no smoking in the rain?

I've been wanting to get back on the smoking trail after of few weeks of travels, but it sounded like the weather wasn't going to cooperate.  But where there's a will...stretch a small tarp over the pergola and bingo!  I'm ready to go.

Cooked up about 6# of chuck roast turning it into mock burnt ends (in full disclosure, not my original idea).  Rubbed the chuck with a homemade rib rub, marinated with Worcestershire, let sit over night and then into the smoker for about 9 hours. 

First 5 hours set at the smoke setting - on my PelletPro that runs about 200 deg and is a timed feed for the pellets rather than by temp.  Then upped the temp to 240 until an IT of 190.  Cut the chuck into cubes, coated with BBQ sauce and back into smoker for about an hour.

Served with some sweet corn and baguette with a 3 cheese garlic spread that I picked up at the farmers market.  Good to be cookin again!

BTW - the last photo is the newest member of the family.  Meet Hazel.

Those mock burnt ends look so good!

And Hazel is adorable. My daughter would go insane :P

Cooked many a chuck in my life but never turned one into burnt ends.  After see how your came out, it is on the agenda ! ! !

Funny how rain stops people. I was at a pool party a few years ago & it started to rain. Everyone got out fast & I said good I have the pool to myself.  One brave soul came out & asked what I was doing ??? ??? After I explained to him that rain was water just like the pool about four people came back in ::) ::) ::)


Yet you go to a pool party with no rain but thunder & lightning & people are slow to leave the pool ??? ??? ???


All of this drives me to drink ;D ;D ;D more

Great looking chuck! If I had to wait until it didn't rain here in Georgia I would never get a cook done!  ;D  As long as my electronics on the pellet pooper don't get wet I am good!

You will probably notice that when you smoke foods in damp weather - that you can develop a nicer, brighter and thicker pink  smoke ring. The extra moisture in the air seems to help keep the surface of the meat more moist - and assist in the smoke sticking. The chemical reaction between the released nitrogen - as one of the gaseous by products of combustion of wood or charcoal products, and the presence of more moisture in the air helps to develop a better - more pronounced smoke ring.

It is just prettier and more "traditional" to see a smoke ring. It does not add flavor, but the eye tells the mind it will taste better ;)
