I brined some pork belly to make some Maple Bacon, smoked it on the Traeger and sliced it up. Baked a little off in the oven and made me a nice little BLT from it to try it out. The recipe is a keeper! Good thing I have 3 more pounds of it :)

YUM! It's hard to beat homemade bacon. I like a good mayo and lots of fresh ground pepper on mine.

I assume that you do this cold smoking? I have never made bacon before - but would like to try it sometime!

No, not cold smoking. I put it on the Traeger on "smoke" setting and let it ride until an internal of 160°. I usually will take it off of smoke setting after about 4 hours and turn it on up to 225 to finish it.
