i'm loving this wonderful machine.  its idiot proof.  which is perfect for me. 

i just want to say that i did not use the PBC correctly.  i started it but didn't put the food on for 1 1/2 hours after i started it (see where the idiot thing comes in).  i was watching football and forgot.  i'm old.  and i had a stroke.  i use the stroke thing alot around here (i'm still milking it). 

ok.  so now that we all know sparky is a idiot lets begin. 

turkey.  sounds about right.

cooked perfect.  i am good.  might be the PBC.  nah... its me.

the last two bones looked a tad overcooked but i did start is really late in the cooking process.  look how even the whole rib looks on both.  they were really, really good.  might have to learn a new way to cook ribs.  loving the PBC. 

ps:  get some instant gourmet.  this is simply fantastic rub on my ribs.  i like it alot.

What makes the PBC different than an UDS?

it doesn't have the icky flavor i got from using my drum.  taste is completely different.  good.

The UDS is a lo and slo smoker where the PBC is more of a power cooker. You still get the "grease fog" from the meat sitting directly over the coals but like Pit Barrel Sparky said, ya don't get that oversmoked flavor.  The grub that comes off this PBS is far superior..IMHO  ;D  than any charcoal cooker out there. It just has to be tried!! You don't even need any wood. I have gotten adventurous lately and have been tossing wood chunks in mine and I feel the food tastes better without it.  The PBC does not need to be adjusted in any way. You light your coals wait 20 minutes hang your meat and you are in for a treat!!  Promise  ;)
