Yesterday was mostly below zero. So, needed something to warm us up. Gumbo always seems to work! Lots of pics....
1. Bacon browning- pulled bacon and retained fat.
Don't know what happened but no pic of chicken browning.
2. Andouille browning.
3. Roux made with bacon, chicken, and sausage fat plus 1 C flour. All those brown bits are flavor!
4. The Holy Trinity added then a gob of garlic
5.Tomato paste
6. Now added 1 qt. chicken broth and 1 qt. water both were heated in a pan first. Added 3T Cajun spices
7. Browned chicken pieces added back in for 90 minutes
8 Pulled chicken, deboned
9. Chicken meat, shrimp and okra added
10. Just before serving added bacon, gr.onion, and parsley
11.Done! Let's eat!
12. Served with lots of crusty bread and some vino!

I believe it was Justin Wilson that said "Oooo Eeee Dat mighty good I guarantee" I would pound a bowl of that. It looks awesome.

I loved that guy. Watched him all the time.

If you have no fresh okra..go to the frozen food section..they have it whole or cut in pieces..either are good.. .☆´¯`•.¸¸. ི♥ྀ.
