My youngest daughter, who lives in London and is now a UK citizen, commented on my Facebook posting on Thanksgiving...
"It looks burnt!"
21-pound bird... brined and smoke-roasted to perfection... moist and tasty!

It doesn't look burnt at all. Also when you smoke chicken and it gets a smoke ring some people will say that it's not done either. Just tell your daughter , "Don't knock it until you've tried it." ...

Yes the smoke ring will make people think its raw and in young turkeys it it is common for myogloben to be realeased through the the thinner bones and turning the meat pink in the dark meat. One way to test if it is raw or myoglobin is to touch a white paper towel to the red meat and if it turns the paper towel red it is still raw. Is why :)

If that pic was of bird that came out of an oven I would tend to say the same thing. Too bad you can't send the aroma with the picture, it tells the story differently.
And I think smoked food is completely foreign (pun intended) to most people on the other side of the pond.
