Title: Hot Chile Oil

Made up a batch of hot chile oil...

15 - 20 dried Thai chiles (about 2 1/2 tablespoons ground)
3/4 cup canola oil
1 1/2 tablespoons toasted sesame oil
1 1/2 teaspoons granulated sugar

Heat the oil in a small saucepan to 250 - 275 degrees F. Add the ground chiles and simmer for five minutes. Remove from the heat. Add the sesame oil and sugar, stir to combine. Transfer the oil to a heatproof container and allow the chiles to steep for two days. Strain the oil into a sterilized bottle. (The oil will keep, refrigerated, for two months.)
