So I decided to try the Fast Eddy's method on some Costco ribs on Sunday. I usually foil my ribs but decided to try this method. I started by making a rub and coating the bone side, waiting 15 minutes then flipping and coating the meat side. Waited another 30 minutes then put the ribs on the top shelf of my 2 Star on Smoke for 1 hour. After an hour, I raised the temperature to 275 and cooked for 3.5 hours. Ribs turned out great. Will definitely do this method again. Also, made some mac and cheese and cooked on smoker at the same time during the last hour and a half.

The MAK 2 Star is a great smoker and makes me a much better cook than I actually am. You guys make a great product!

I made a roux with 1/4 cup butter and 1/4 cup flour. Added 2 cups heavy cream and 2 cups milk. Stirred about 10 minutes then added a package of cream cheese. When that was melted, I added about 4 ounces of parmesan cheese. Then the fun started. I just started adding cheeses that I had, a little at a time: 8 oz gruyere, 8 oz colby, 8 oz gouda, 4 oz of mild cheddar, and then finally a can of Campbell's cheddar cheese soup. After all the cheeses melted, I poured it on top of a pound of cooked noodles, mixed together, and put in the tins. Oh, I also added a tsp of pepper and a tsp of granulated garlic.
In summary, the seven cheeses were: cream cheese, parmesan, gruyere, colby, gouda, mild cheddar, and Campbell's cheddar soup. Probably a little much but I've heard no complaints.

I and my wife like non-foiled ribs but the rest of the children and grand children like them foiled so ya know what I make. ;D
