Title: Home Made Sausage - Passing on Family Tradition
Post by: cybermoser on April 30, 2017, 01:49:20 PM
So thought I would write up a post of us making the family sausage.   Deer/Pork cut.

Start off with the meat ground twice.
(http://i1241.photobucket.com/albums/gg507/cybermoser/Mobile%20Uploads/20161102_191757.jpg) (http://s1241.photobucket.com/user/cybermoser/media/Mobile%20Uploads/20161102_191757.jpg.html)

Make sure you mix all your ingredients VERY WELL
(http://i1241.photobucket.com/albums/gg507/cybermoser/Mobile%20Uploads/20161104_145333.jpg) (http://s1241.photobucket.com/user/cybermoser/media/Mobile%20Uploads/20161104_145333.jpg.html)

Try and have one or two sets of helping hands.
(http://i1241.photobucket.com/albums/gg507/cybermoser/Mobile%20Uploads/20161104_145337.jpg) (http://s1241.photobucket.com/user/cybermoser/media/Mobile%20Uploads/20161104_145337.jpg.html)

Just make sure all hands are washed first.

Next, make sure you inspect

Put into natural casings.
(http://i1241.photobucket.com/albums/gg507/cybermoser/Mobile%20Uploads/VZM.IMG_20161104_173529.jpg) (http://s1241.photobucket.com/user/cybermoser/media/Mobile%20Uploads/VZM.IMG_20161104_173529.jpg.html)

Prep Smoker.....  Just got this electric smoker given to me from a friend.... not a big fan of electric but we will try it and see how it works.
(http://i1241.photobucket.com/albums/gg507/cybermoser/Mobile%20Uploads/VZM.IMG_20161104_115435.jpg) (http://s1241.photobucket.com/user/cybermoser/media/Mobile%20Uploads/VZM.IMG_20161104_115435.jpg.html)

Bring smoker up to temp, low and slow.
(http://i1241.photobucket.com/albums/gg507/cybermoser/Mobile%20Uploads/20161105_083157.jpg) (http://s1241.photobucket.com/user/cybermoser/media/Mobile%20Uploads/20161105_083157.jpg.html)

Add sausage
(http://i1241.photobucket.com/albums/gg507/cybermoser/Mobile%20Uploads/20161104_205203.jpg) (http://s1241.photobucket.com/user/cybermoser/media/Mobile%20Uploads/20161104_205203.jpg.html)

Check on sausage 4 hours later.........
(http://i1241.photobucket.com/albums/gg507/cybermoser/Mobile%20Uploads/20161104_205157.jpg) (http://s1241.photobucket.com/user/cybermoser/media/Mobile%20Uploads/20161104_205157.jpg.html)

Check on sausage another 4 hours later.......
(http://i1241.photobucket.com/albums/gg507/cybermoser/Mobile%20Uploads/20161104_211447.jpg) (http://s1241.photobucket.com/user/cybermoser/media/Mobile%20Uploads/20161104_211447.jpg.html)

Give up on dumb electrical smoker.... Can't get enough air moving inside.....  Take out the Brinkman, lets try coals and wood.
(http://i1241.photobucket.com/albums/gg507/cybermoser/Mobile%20Uploads/20161105_073035.jpg) (http://s1241.photobucket.com/user/cybermoser/media/Mobile%20Uploads/20161105_073035.jpg.html)

Stoke the fire and get it prepped just right.
(http://i1241.photobucket.com/albums/gg507/cybermoser/Mobile%20Uploads/20161105_073021.jpg) (http://s1241.photobucket.com/user/cybermoser/media/Mobile%20Uploads/20161105_073021.jpg.html)

Attempt to lay flat..... Never smoked like this before.  Dad always had a large walk in smoke house we would hang our sausage, hams, bacon, etc.  Worth a shot though.
(http://i1241.photobucket.com/albums/gg507/cybermoser/Mobile%20Uploads/20161105_083150.jpg) (http://s1241.photobucket.com/user/cybermoser/media/Mobile%20Uploads/20161105_083150.jpg.html)

Results were better than the dumb electric smoker but still not the same as dads.
(http://i1241.photobucket.com/albums/gg507/cybermoser/Mobile%20Uploads/20161105_072244.jpg) (http://s1241.photobucket.com/user/cybermoser/media/Mobile%20Uploads/20161105_072244.jpg.html)

Think outside the box, and modify the brinkman.
(http://i1241.photobucket.com/albums/gg507/cybermoser/Mobile%20Uploads/20161105_115658.jpg) (http://s1241.photobucket.com/user/cybermoser/media/Mobile%20Uploads/20161105_115658.jpg.html)

(http://i1241.photobucket.com/albums/gg507/cybermoser/Mobile%20Uploads/20161105_121735.jpg) (http://s1241.photobucket.com/user/cybermoser/media/Mobile%20Uploads/20161105_121735.jpg.html)

Much happier with the results when hung.
(http://i1241.photobucket.com/albums/gg507/cybermoser/Mobile%20Uploads/20161105_115937.jpg) (http://s1241.photobucket.com/user/cybermoser/media/Mobile%20Uploads/20161105_115937.jpg.html)

After they have hung to cool, time to prep for packaging.
(http://i1241.photobucket.com/albums/gg507/cybermoser/Mobile%20Uploads/20161105_141137.jpg) (http://s1241.photobucket.com/user/cybermoser/media/Mobile%20Uploads/20161105_141137.jpg.html)

(http://i1241.photobucket.com/albums/gg507/cybermoser/Mobile%20Uploads/20161105_130715.jpg) (http://s1241.photobucket.com/user/cybermoser/media/Mobile%20Uploads/20161105_130715.jpg.html)

Package and freeze....
(http://i1241.photobucket.com/albums/gg507/cybermoser/Mobile%20Uploads/20161105_144602.jpg) (http://s1241.photobucket.com/user/cybermoser/media/Mobile%20Uploads/20161105_144602.jpg.html)

Take one package out at a time, place on grill and warm to perfection.
(http://i1241.photobucket.com/albums/gg507/cybermoser/Mobile%20Uploads/20161105_072825.jpg) (http://s1241.photobucket.com/user/cybermoser/media/Mobile%20Uploads/20161105_072825.jpg.html)

Enjoy the fruits of your labor, better than anything you can buy in the store, plus you are learning a skill that is invaluable.  And I am passing the torch to my young sons.

Hope you enjoyed this.

Hoping to build a large walkin cedar smoker this summer before Deer/Elk Season this fall so I can smoke much more at a time.

Great post!    Wish my kids would have taken to cooking and sausage making but they had "Other" things to do

Great post!    Wish my kids would have taken to cooking and sausage making but they had "Other" things to do

Seems a lot of things like this are generation skipping.  My dad cared nothing for farming or gardening, but his father had a 52 acre hobby farm when he retired as an engineer from National Biscuit Company (Nabisco).   I spent my summers growing up at my grandparents, so I picked up their love of working in the dirt and making fresh food.  Back in the day we took the livestock to market, and culled chickens to fill the freezer.  I don't have any livestock, but I do love to work with large muscle meats and break them down and make all manner of sausage.  My kids, not so much.  So here is hoping that it is generational skipping and I'll have something to pass on to the grand kids one day.

But seeing Cybermoser's big kids smile and play in that big blue garden bucket (I have 6 of them in the basement), really made my heart warm.  Congratulations!

Was this done this past Fall?
