Cooked some short ribs to snack on wasn't sure how they would turn out but they turned out great. cooked 3 hrs.

Short ribs are a great meal. I see you hung them. I play it safe and use the cooking grate. Hate to see one of the bad boys plummet to the coal basket when that beef gets tender.
