Title: Scotch Eggs (sort of)

Not so traditional Scotch Eggs.

Ingredients:
4-5 eggs hard boiled (depending on the size)

Hash brown:
1/2 Bell pepper
1 Jalapeno (optional of course)
1 medium onion
4-5 potatoes (I use new potatoes and shred them with the skins on)
salt and pepper (I use a garlic seasoning with pepper since the sausage and bacon is salty already)
shredded cheese (i like sharp cheddar or the Mexican blend)
A little good maple syrup for the breakfast taste :)

2lbs of sausage (I have used Jones, or hot sausage)
Bacon

I cook down the onions and peppers then add the potatoes and cook until soft. Season with salt and pepper to make the flavor hash browns you prefer. Move to a mixing bowl. Add the cheese into the mix and a little bit maple syrup (if you like that flavor profile) and let cool to be able to handle

Cut the eggs in half the long way.
Make sausage patties out of the lump sausage that will be big enough to cover a full size egg (the potatoes mix will make up the rest of the size.

Put a spoonful of the potatoes in the middle of the sausage patty and put the egg on top. Seal the sausage around the egg mixture (try to handle as little as possible since sausage should not be at room temp too long)
Make sure that the egg is completely covered and that the sausage is not too thick around it.. as even as possible.

Wrap in bacon and add a little BBQ seasoning to the outside.
I cook them at 250 or so until the IT is 160. Let cool for a little bit and enjoy.

Any input please let me know.. this is a recipe tat has evolved in my head over time.
