You will all think I'm nut's but this is inspired by a regional Quebec dish. It is typically french fries, gravy and cheese curds.. and its fantastic. I had no curds so I had to improvise.
Gotta have some smoked meat on there...
Seasoned from the box I got from my pal Sparky..(http://i1087.photobucket.com/albums/j463/arenwhite73/Smoked%20Chicken%20Poutine/IMG_4806.jpg)
Keep the beer from freeing.(http://i1087.photobucket.com/albums/j463/arenwhite73/Smoked%20Chicken%20Poutine/IMG_4807.jpg)
Chicken smoked for an hour and bumped to 350 to finish. Chopped up.(http://i1087.photobucket.com/albums/j463/arenwhite73/Smoked%20Chicken%20Poutine/IMG_4808.jpg)
On top of some crispy fries, a whole lot of cheese and some chicken gravy..(http://i1087.photobucket.com/albums/j463/arenwhite73/Smoked%20Chicken%20Poutine/IMG_4812.jpg)
You will thank me once you try it!!

Brings back some old memories ::)
When I was in college (yes, there were colleges back then) we had two favorite 3:00 AM Sunday morning haunts. Sweaty Betty's (not its real name, that's just what everybody called the joint) served outstanding french fries and gravy. Denco's (its real name) on Main St. served a "Darlin" -- elbow macaroni covered with chili, two fried eggs and cheese. Either one served its purpose admirably. I could not have survived without these panaceas.

Looks great!
Pile that over some toast, and you have a Springfield, IL classic... (we call it a 'horseshoe') ;)

I'll take a plate of that!
