I had a weird thing happen Christmas Eve, did a NY Strip Roast on the GMG and cooked it till IT of 124 and pulled it. Let it rest for 1 hr on counter loosely covered with foil. The IT rose all the way to 138, that is 14 degrees. I was expecting a 8-10 degree rise.
Roast still turned out great but was a little over done for my liking, everybody else thought it was great.
Anybody ever experienced that before?

Did you happen to reverse sear it without letting it cool for a bit ?

I think our prime rib went from 125 to around 133. But in the past I have had them go higher at times
...I guess I am no help here lolz

No, I let it rest for 1 hr before the reverse sear
