I am in Hillsborough NC. Cook Q mainly as a hobby but more as a second carreer as in catering as I get closer to retirement. I have a full size BQ grill with turning grate, a traeger 75 and recently added a Dreamwerks 1600 pellet grill.
I enjoy forums like this of like minded folks who share ideas and techniques.

I also picked up an Academy traeger knockoff. I had to replace control unit with extra traeger i had. it seems to work pretty well

That all looks really good. Especially the color on the butts. Any info you can share on the recipe?

pappy, i dont inject or apply anything other than the rub on (12 hours before cook. i put a rub on that is basically Alton brown's substituting sugar in the raw (tubinado)
