Thank you everyone! As you can see in the pictures, we all love medium rare beef.
This was the best PR I have ever made.
I slow cooked it on the Boss at 225. When the IT hit 110 I pulled it, loosely tented with foil and let rest while I cranked up the oven to 500. Once the oven hit 500, I put it in the oven uncovered, for about 10 minutes. Pulled from the oven and let rest another 15 to 20 minutes.
The IT was now showing at 130.
Everyone absolutely loved this PR.
Reverse sear is definitely the way to go as this PR was med rare from edge to edge.
