i haven't cooked a butt for a while.  fired up little blackie for some smokie, smokie.

love the color of my orange mustard on meats.  great flavor profile also.

onto little blackie for 3 hours of smoke and then 240° for the ride.

this was the the most stubborn butt i have ever cooked.

opened faced pulled pork sandwich,  PBC ribs, costco scallop potatoes, peaches and my milk.  a perfect meal.

That bark on the butt is outrageous. Ribs look so killer. What are great meal. I've had those Costco tators several times.....folks you should pick them up and stick um in the freezer.....for emergency purposes.

How do you compare the taste of your ribs that have received your foil love when cooked on the MAK to the PBC ribs?  I am sure they are all good, but is there a noticeable difference between the two?

I bought one of those Bayou Classic Leg & Wing Rack while I was visiting St. Simons Island.  Today is wing day and I want to cook some wings on the PBC using this rack.  Pictures to follow.

I've always cooked my ribs either in my Bradley or my Traeger.  Most recently and I mean recently I made one rack in the PBC, rack cut in half and hung.
The ribs were amazing, the charcoal flavor is the best part. Not overpowering but you can definitely tell they were cooked over charcoal. I them sauced them and hung them back to set the sauce. There is just something magical to me that happens to meat when cooked with charcoal.
Anyway back to see what Sparky has to say :) :)

i have my own drool bib.  its called my beard & tummy.  thank ya'll for the kind words.  i cooked ribs on the PBC, mak and WSM last night.  going to sports chalet to get another okuma trout rod i will post results of the great rib cook off later.      the one smoker that produces the less favorite ribs w/ be sold.  what?  the fish are calling me.  fish: "sparky, sparky.  come throw you line in.  i will bite your hook".   i think their fibbing.    ::)

Was doing some fishing last year and had a family of river otters playing right next to me.  guess they were hoping I would catch something.  Oh were they wrong.  Fun to watch. 

Need to have you come up this way.  Just breaking ground on a new place on the river.  guy next door landed 100+ sturgeon in two weeks last year.  Steelhead, Salmon, and sea run cutthroat.....   Love fishing but not much for eating.  Need to figure a way run a line down while I am taking a nap.

Sorry Sparky - may I "barge in" as well? I agree with the charcoal flavor comments. I also use a CharBroil 500X and Weber Performer - both charcoal and I enjoy them. But the charcoal flavor from the PBC is different than either of those. Not saying it is better or worse - but different. So, I like using my various cookers depending on what I hope to taste.
And now back to Sparky!  ;) ;D
