Time for some chicken thighs again: separated them into thighs and drumsticks, rubbed them and put them on the kamado at about 215°F with cherry wood.

Flipped them after 1 1/12 hours.

Glaced the thighs with Blues Hog after 3 hours and raised the temperature.

That looks great!! Beautiful presentation.
Would you share how you constructed those? It looks like the skin is still on those lollipops.

Don't really know, what to say about the construction - nothing special... Thighs were deboned and rubbed - no further treatment but glazing. The skin was left on both, thighs and lollipops.
-
So to do the lollipops you just pull the skin up the leg bone towards the top of the drumstick?
-
Looks good, thighs and drumsticks are my favorite two pieces of chicken.

So to do the lollipops you just pull the skin up the leg bone towards the top of the drumstick?
Yes, exactly. Do you take the skin off, usually?
