Beef ribs - This is one of those "nemesis" cuts that I have not been able to get to turn out the way I wanted. I think the problem has been more with the source meat than the methods.
Started with some beef ribs from RD

Keeping it simple with Kosher salt, pepper and Garlic

On the MAK 2 star with Oak and Mesquite. Pellet Boss set to 275F

There is just something primal about picking up a bone with that big a hunk of meat on it and eating it.
If the source product I was using in my other attempts were this meaty, I think I would have done better in the past.
The Mrs. Wasn't real thrilled with the idea of beef ribs (given the results of my previous attempts) but she liked them.
And lets not forget dessert!

I just started a new job in SF just 2 blocks away from a RD. Will any resale number do if you are not in the food biz??

All you need at ours is a biz license.

SS, a KCBS membership will get you into RD as well. They issue you a 'day pass' every time, but trust me, you can do a lot of damage to your checking account in a 'day'...

Are those the beef short ribs? Had those tonight. Bought a huge pack from RD and divided them up. I think I actually like the short ribs verses a chuck roast. Cook it like a pot roast. So good and so tender. The fat in the beef, not on top, really helps.

fl looks like you got it right this time!!! Great photos too. I have only done the beef ribs once this past summer. Mine were good and I thought were pretty meaty but yours topped it. Don
