Butter Poached Lobster Grilled Cheese
Smoked some cheese on the Mak.

Let’s start with some caramelized onions

Make a beurre monte
Just water and butter. Do not let it go above 190
Good to go

Blanch the lobster tails for about 3 minutes. Put skewers in to keep them straight.

Let cool. Take out of the shell

Into the buerre monte. Bring to a temp of 160

Definitely ain't never had none like that. Wow! I like the way you used the skewer to keep the tail straight. That works on sausages and other things which tend to curl as they cook as well. Dee

I just learned the correct way to make a lobster roll

Well it's not quite the traditional way but trust me there is no better way to cook lobster. It would be great on a lobster roll. The sauce is easy to make but does take a bit of butter. Im thinking next time adding a little old bay. The lobster is just melt in your mouth. Good luck!
BTW....dont try this with warm water lobster. Use only cold water lobster tails.
