I got inspired by an earlier post and thought I'd fire up the Yoder and do a yard bird...
Spatchcocked the chicken (which IMHO should always be done)... brushed it with some homemade chipotle mayo and liberally dusted it with W.O.W. Trail Dust...
Fired up the YS640 with a combination of apple & cherry pellets to 400 degrees F. with the diffuser/ drip plate in place and the damper in about five inches. Cooked the bird for about 75 minutes to an internal temperature of 160 degrees F. Took it off the cooker, tented, and let it rest for 10 minutes.
Served with roasted garlic smashed tatters and asparagus.

Oooh yeah! Apple & Cherry is a great combo for chicken. YUM!!!
So how did the skin turn out with the Mayo?

I meant to mention above, Nice choice with the W.O.W. seasoning. It's so dang good on chicken; the Sage & Dill come through nicely.
Anyone who hasn't tried it on a bird yet needs to!
