Had the Yoder fired up to do some St. Louis trimmed ribs, country ribs, sea salt and mixed peppercorns but still had some more room so I thought... why not some Pig Candy!
Had some Buckboard bacon and some streaky bacon I had cured and smoked before...

Put the bacon on a FrogMat and coated it liberally with "Super Pig" on both sides... Then let it smoke at 225 degrees F. for an hour or so and then brushed with pure maple syrup (the good stuff... Grade B) and let it smoke for another hour. I'll finish it in a saute pan for a great breakfast with some poached eggs over English muffins and holladaise!

Make an extra plate, please. I'm on my way!

Had to show Kimmie this one, she loves Pig Candy!

Tommy,
Do you have to buy the large economy size of Super Pig? You know, the 55 gallon drum size!

Last order was a 2 lb pkg next one may have to be 55 gal drum! ;)

I think we are going to be pulling the trailer to Augusta again this year. There will probably be room for the 55 gallon drum. (That is if Tim doesn't bring all his toys.)

As has become customary, I made pig candy for the inmates graduating from our Purpose Driven Life class at the local prison. They went through 120 pieces at the speed of light! Ordered a replinishment of Super Pig too late and had to "roll my own". Wasn't as good, but they didn't know that ;)

I don't know if that is a good idea or not Hub. They will be getting themselves put back in there just to get some more pig candy.
