Mama coming home tonite, went to NOLA for wedding stuff.( daughter #1 getting married in NOLA this fall) I volunteered to stay behind & dogsit ::)
I planned on a nice slow butt cook on the horizonal BUT the rain came early!
Table top grill with a few mods makes a good low & slow cooker & it's under the 11 ft. patio umbrella.
Fresh 5 & 1/2 lb butt well trimmed from grocery.
Usual mustard & homemade rub.
Set up grill with fuse burn & heat shield.
Off we go!

Looks like a good start. Yah know, looking at that first picture makes me wonder if them young whipper snappers that voted plastic bags to be illegal in Seattle area ever thought they might need to bring home a leaky hunk of meat. Hope there fancy new bags prevent blood soaked car seats. Sorry for my Sunday morning Rant :)

In Minnesota, where nothing is allowed, we have a choice of paper or plastic.....for now ;)

I love how tolerant pork butts are of different cooking styles. I have done them so hot and fast that M. Mixon would blush. Heck, I'd boil ione and then take a blow torch to it to bark it if necessary. ;)

Butt got to 180 between showers & I panned/ foiled & finished to 195F then let sit & pulled.
The little cooker kept cooking for almost 10 hrs!

Looks good. I too use foil at the end. For me it seems to keep the moisture in and does a nice slow finish.

NICE, and not just the pork.
I like your little setup with the grill. You can just pullup a chair with a good book, a drink and relax while cooking.
