Title: Wolfe's Pepper Stout Beef with a twist.....
Post by: smokeasaurus on January 22, 2012, 09:05:15 AM
The last time I attempted this excellent recipe I cooked my chuckies too fast and I couldn't pull them. So...I had a big pork butt I decided to do with the recipe and the results were outrageous!! One thing I did not compensate for was the amount of veggies. I used the same amount that I would do for the 3 lb chuck and should have doubled them for the 10 lb butt. All in all it is really good and next time I actually just might get it right if I double up on the veggies!!
I smoked the butt overnight at 195 till internal reached 170. I pulled it off the smoker when it was nearing the end of its stall period. The recipe is over in the beef recipe section...hope everyone gives it a shot.....real tasty!!!

Montana Cattle Company has some great "Big Sky" seasonings!!

All slathered and seasoned up

You can see here that I should've added more veggies
