Sorted and rinsed the gator.

Cut into gator nuggets. Going with 2 marinades along with 1 cup water and 1/2 tsp cure 1.

The gator is not as dense as chicken breast so i'm only going to vac tumble for 5 mins then into the fridge overnight.

Rick - we used to use a buttermilk soak and some cajun seasonings on 'gator meat - then batter and fry! Nice treats. Looking forward to seeing how these come out for you.

If there is anyway you can make it to the SEGASO, you can join a lot of your forum friends in person. I'd personnaly love to sit down and eat some of Rick's gator jerky with you.
