Title: Coconut marinated pork tenderloin with black beans and rice

This came out really good.

24 marinade in garlic, coconut milk, and lime juice. Cooked on the Weber Performer direct to start and then finished indirect. It was so tender, I cut it with a fork. Perfect 145 degrees.

Black beans and rice with BACON.  Nuff said on that.

Oh man, I could eat a big ole bowl of that rice and beans, and that Pork looks cooked to perfection Mister, nice job!!

What was your ratio of coconut milk to lime juice?
Was that a 24 hour marinade?

Yep. 24 hours. A 15 ounce can of the milk to the juice of two limes. I think it could have used more lime.

Citrus almost always "wakes" up the other flavors. I like to squeeze a fresh lime or lemon over just grilled meat for tacos or burritos.
