Picked up a boneless 5# Prime Rib - Rubbed w/ Dijon Mustard / EVOO / Fresh Garlic / Fresh Rosemary / S & P

Total cook time was just over 2 hours. The PBC ran btwn 270 - 280

Noah has told me - several times - that I really should try a PBC prime rib.....Eatin Smoke just ramped up my timetable to do it ;) ( There is a story about Noah having a client that flies in every year - holds a big party/cookout where he hires Noah and Amber to cater/cook. The man told Noah that he had eaten prime rib at the best restaurants in the world - and none compared to Noah's PBC Prime Rib!. The gentleman was so in love with the Prime Rib that he has purchased and sent 20-30 - I forget teh actual number - PBC's to friends and relatives :D!!! Talk about a testimonial! ;D
