Well the Labor Day week-end is over and it was not very exciting around here! I am just getting over a bout of stomach flu and have been eating pretty bland. Looking at all your cooks has had me drooling tonight! If I missed any ones I am sorry.

I did manage to get a fire going in my Chimenea for doing smores Sunday evening. The kids and grandson, and two of his neighbor girl friends came over and ate some smores. I didn’t have any, just enjoyed watching all have fun. It is funny seeing my 8 yr. old grandson get about one step more mature when there are girls around! They had a good time swinging on my rope swing. Both dogs wanted some smores but I had to get them their own treat.

I was setting up by the house and a treat for me was to have a hummingbird suddenly appear about 1 foot in front of my face and take a look then back off and go have some sugar water close by.

Tonight it was just me & Mama for supper. I thought a fish sandwich and some pasta would be good and easy on my stomach. I had some frozen Gorton’s sandwich filets and some pretzel buns. I had never done breaded fish on my Traeger so wanted to try them.  The directions said 20 minutes in a 400 deg. oven and turning half way thru. It said to leave frozen but I did have mine setting out about 15 minutes before going on the grill.

I heated the Smoker to 350 deg. with the grill grates, back side up. I planned on 30 minutes total. In the mean while I got the thin spaghetti on cooking. I turned the fish at 14 minutes and they were plenty brown so in another 10 minutes I added the buns to heat up a couple of minutes. Total cook was about 26 minutes.

I finished the pasta with white truffle oil, butter and about a half cup parmesan. It all tasted pretty good; the fish were plenty done and very crispy, I would say as crispy as deep fried. I had mustard and mayo on mne.

Not an exciting post but it shows you can do frozen pre breaded food on a pellet smoker and get good results. Now I know if I need a quick easy meal I can have some fish sandwiches done pretty quickly.

Looks tasty, Don!

Sorry to hear about the stomach flu - those bugs can get you down really quick, and sometimes for an extended time.

Sorry to hear you were under the weather Don. Hope your back to your good ol' self sir! That meal looks very nice. I love fish, (although, crappie filets woulda been nice too) and pasta! Glad to see you're back!

You just took simple boxed fish filets to a whole new level baking them in the smoker, Don.

I am going to have to give that a try.

I hope you are feeling better, Don. I like the idea of taking simple things and adding a new twist or touch. Nice cook!

Sandwich looks much better than any from a fast food place.
