Started with chicken legs with their skin pulled back...

The a coating of BP Desert Gold was applied...

Now pull the skin back to it's normal position...

Then some more Desert Gold applied and some Hickory Smoked Salt to the skin...

After a few hours in the fridge air drying I fired up the PBC. After 20 minutes the coals were ready. I used the rack insert for the legs...

After 45 minutes they were rotated and went for another 15 minutes...

Plated with West Coast Toast that was also made in the PBC and salad...

how many inches is the PBC?
How many whole chickens can you fit in your old smokey Jack? How many full racks of ribs? How many Tri-tips? I guarantee that the PBC can hold more.
They are entirely different cookers. The grill is not designed nor was it intended to be 8 inches above the coals.
Nor did I post this thread to challenge your old smokey. Your chicken always looks good and I am sure it is. I can tell you that my chicken legs from the PBC tasted better than the Big Easy legs I make and that is saying something.
It is designed to give great results every time to the novice cooker and does a excellent job. The charcoal tray is sized to produce the same temperature and burn time every time you use it. It is truly a set it and forget it charcoal cooker that has a huge capacity.

Well Jack I guess the Old Smokey is the only cooker that anyone should ever own. Sorry I even posted my cook >:(
Just be aware that this thread was posted in the PBC part of the forum. And I felt your comment was not appropriate even if it was "tongue and cheek". Noah is a forum sponsor and it is not respectful IMHO to treat a sponsor that way.
That would be like someone posting about how great Milt's pellets are in his part of the forum and then I post "yeah they are good but this other pellet is much better". Or someone gets a smoker from Eric at Pellet Grill Outfitters and posts about it in his part of the forum but then I post "good price but you could have got a better price here." or "Should have bought an Old Smokey" something that Eric does not carry in their product line.
This part of this forum is to promote the PBC. That is why this part of the forum was created.
I know there are members that posted in this thread that have many different cookers. Some might feel that they could have done a better job with their WSM or MAK or even in their Weber kettle but they chose not to do that.
If this was posted in the non-sponsor area I would probably just kept quiet about it. Probably would not have responded to your first comment at all. But I felt like it should be addressed.
The Old Smokey produces some great looking food and your posts have proven that. But that is not the end all be all cooker IMHO. I have seen great cooks on this forum from all kinds of equipment.
Truth is that it is 20% equipment and 60% experience and knowledge.... Period!
You give someone like a Old Dave a simple hibachi grill and he will still put out something fantastic because of him... Not the cooker. And look what RickB can make from his home oven.
We are all here to learn. If I wanted to get into a "my cooker is better than your cooker" I would go to another forum. I have seen enough of that already at other forums.

I think I'm doing legs very soon in my PBC. The more I look at this post, the more I want to try it!

Los great Mike! I also do the pull back and season under the skin trick. Works great. I have been using the grill rack a lot more often than the hooks lately also.

My barrel smoker is the easiest one to use for chicken because of 1. the indirect heat when I use the water pan; 2. the ease of controlling the temp and smoke; 3. removing the water pan and hanging the chicken on hooks creates great flavor and crispy skin
Deb is the biggest fan of the barrel cooked chicken
