Great breakfast food...
Scrambled eggs with country ham, green peppers, red onion and Jack cheese wrapped in a burrito...

I agree!
I love Breakfast burritos. We usually use sausage, but I love country ham and am going to have to give it a try next time.

Mmmmm... How well do those freeze /reheat? I'd love to make a batch for quick breakfasts from the microwave!
-
I haven't tried freezing them but it would probably work.
I usually make up a half dozen at a time; let them cool to room temp and power wrap with food film. Toss them in the fridge and nuke one for breakfast for the rest of the week... with my "Chef Mike" it only takes about 45 seconds. (Be sure to vent the food film before you nuke the burritos.)

Hahaha... what was I thinking. Those wouldn't last long enough to freeze around here unless I made a couple dozen. :P
