Continuing on my Oktoberfest theme of cooking (after all it is October) it was time to have some homemade brats that were made earlier...

First you need to sauté one (or two) large yellow onions in a large skillet (I use cast iron)...

Cook the onions with some smoked coarse kosher salt and granulated sugar until nicely browned... about 15 to 20 minutes

Add a couple of bottles of beer to the skillet, some Worcestershire (and hot sauce if you want)...

Add the brats...

Let them simmer in the pool, turning occasionally, for about 20 minutes. (You want the brats to be 160 degrees F. when they get through swimming.) Remove the brats from the beer bath; reserve the onions for serving

Place the brats on the grill (or in a grill pan) and cook, turning occasionally, until nicely marked...

Serve with potato salad, braised red cabbage and homemade German-style grainy mustard or put the brats in a large roll and top with the mustard and sautéed onions

You'd never get something like that at a German Oktoberfest - unfortunatelly.

Is that German-style grainy mustard sweet?

Weissbier. 8)

Here are the classics (I tried to write it on Bavarian):

Weisswurscht with sweet brown mustard and Brezn (Bavarian pretzel)
Fleischpflanzl (meatballs, often eaten in a bun)
Hendl (grilled chicken)
Haxn (pork hock/shank)
Leberkaas (literally: Liver-cheese), bavarian butchery speciality, contains neither liver nor cheese
Obazda (bavarian cheese speciality with Camembert, onion, paprika, caraway, butter and sometimes also beer)
Reiberdatschi (potato pancake)
Ripperl (smoked pork chop)
Semmelkneedl (dumpling made of bread, salt, eggs and parsley)
Steckerlfisch (fish grilled on a skewer)
Wammerl (pork belly, often smoked)
Zwetschgendatschi (flat yeast-dough with a thick layer of plums)

Perfect brats - great pictures. Brings me back to tailgating at County Stadium in Milwaukee before the Packer's game (don't have season tickets at Lambeau.)
