Title: How to make great Mac and Cheese go bad

Not braggin', just stating a fact, I make some really good mac and cheese.  At the Gathering I wanted to share mine with everyone there and made up a big batch.  I mixed it as I normally do at home and decided since I had my smoker going I hickory smoke it for something a little different.  Boy, was it different!  After pulling it from the smoker and letting it cool a little bit I tasted it. Wow!! Was it terrible.  It was so bitter!!! I couldn't let anyone get even a spoon full of that foul tasting stuff. (I do think Terry got a taste before I did.)  I took it out in the woods where I had been dumping stuff for the animals (no, not the ones attending the Gathering) to come and eat at night.

I figured what happen was the hickory smoke was to strong and over powering.  I also think it's maybe because like when you cold smoke cheese it's terrible tasting if you try to eat it before it has set up and "cured".  At least I think that's what happened.  Anyhow,  I ain't gonna heavy smoke no mac and cheese no more.

Ahahhh...

I wondered what happened to that Mac & Cheese (I couldn't find it)!  ::)

I got a taste of it and it was awful, but looked so good I had to try it. It would have been perfect..except for the smoke. Can't wait till next years. I watched him make it too and I know it was good.  All that cheese.  Pam .☆´¯`•.¸¸. ི♥ྀ

I had a taste but I was forewarned so I dipped down past the surface and didn't get much of the "too smoky" part.  Seemed okay but since I don't eat mac & cheese but about once every ten years, I'm no authority.

In other words, you're still entitled to my opinion but in this (rare) case, I wouldn't pay too much attention to it.

Dee did you mix it real good after smoking?

If not all that smoke was just on the surface. And letting it mellow for 24 hours may have helped out the flavor.
