Title: Chicken Thighs for Dinner

Got my beesr a few weeks ago and have thoroughly enjoyed learning to cook with it.  I appreciate the integrated thermostat and how little attention is required during the cooking process.  The result is I can cook on days when I'm too busy to constantly mind the fire and smoke.

Last night was a great example.  I arrived home around 6 and started the beesr preheating with some hickory chips.  Then went inside and spent about 10 minutes prepping some chicken thighs with olive oil and homemade rub before placing them in the basket.

Beesr was just starting to smoke when I looked outside so I dropped the chicken and left the beesr on 15 hoping to end up with smoked chicken with a crispy skin.  Checked my watch, closed the lid, and made a mental note to check on them 30 minutes later. 

Started water boiling for rice; and set some canned black beans on to simmer.  So far I have about 15 minutes invested in cooking dinner.  Off to do some chores while dinner cooks!

Quick check of the chicken at 30 minutes...not quite there.  Gives me time to finish organizing my camping equipment.  Another check of the chicken at 45 minutes...IT is 172 and skin looks great.

Dinner is served!  Smoky crispy juicy goodness on a plate!

That chicken looks a lot better than the Church's I brought home after work.  ;)

Looks good happyappy! What was the temp in your beesr? I'd like to try those.

I'm not sure what the actual temp was.  Setting 15 is the highest setting which is supposed to correspond to 525 if I'm not mistaken.  I'm amazed at how smoky and moist chicken comes out of the beesr when cooked so quickly.
