We got super busy and planted our garden WAY too late this year, so we ended up with gobs of unripened tomatoes.
Aside from fried green tomatoes (YUM!) and pickled green tomatoes, does anyone know any fun ways to use up these little buggers? I can always feed them to my chickens, I suppose! Those crazy chicks will eat ANYTHING! ;D

Sliced thinly, they are surprisingly good on pizza with mozzarella and balsamic vinegar

Like pz said, slice them very thinly along with some red onion and minced garlic. Then stir to combine and give the mixture a bath in cider vinegar. Add a little salt and pepper to taste. Much, much better than cucumbers IMHO ;D
Another good use is to de-seed them and chop/dice finely along with yellow onion, sweet peppers, a few jalapenos, black olives, garlic and a few de-seeded ripe tomatoes. Stir and "tighten" with a few teaspoons of EVOO and a little salt. This is a modification of pico de gallo or "fresh salsa" that is great for dipping with corn chips. I also like to use it in omelettes. You can adjust the heat level by the number of jalapenos you use and whether or not you remove the seeds and veins from them.

Did I mention I make great pies? I love to make pies. Nobody doesn't like pies. I also have a recipe for a great green tomato pie, kinda like a rubarb pie. Very easy to make, but I am in Florida and my files are on a microsoft external drive and I am on an apple and gonna try to get the file from ms to apple. Wish me luck. I'm gonna need it. Pam
I finally got it.
Arlene's Green Tomato pie
3 1/2 cups diced green tomatoes
1 cup sugar
3/4 tsp cinnamon
1/8 tsp salt
5 tbs flour
Mix and put in pie crust. Sprinkle a lil butter on top of tomatoes. Add a top crust. Bake at 350 for 45 to 60 minutes. Enjoy. Pam

Fried green tomatoes on a cheeseburger. Green tomato bread.
Cheeseburger is pretty self explanatory. Here is recipe for green tomato bread:
Combine:
3 cups AP flour
1/4 tsp baking powder
1 tsp baking soda
1 cup sugar
1 T ground cinnamon
Combine and add to dry ingredients just enough to moisten:
2 large eggs, lightly beaten
1 cup vegetable oil
1 tsp vanilla extract
Fold in:
2 cups finely chopped green tomato
1 1/2 cups chopped pecans
Spoon batter into 2 greased and floured loaf pans. Bake 350* for one hour or until tooth pick comes out clean. Cool in pans on a wire rack for about 10 minutes. Remove from pans and let cool completely on wire rack or you can eat warm.
I grantee you will be the only one in your neighborhood serving this. It's good and different.

Oh my goodness, those are some great suggestions! (I'm embarrassed I even THOUGHT of giving them to the chickens!!) :-[
The pie and bread sound absolutely delightful, and I love the ideas of relishes/salsa... Green tomatoes have such a unique flavor, I can see them really making a neat twist on more 'traditional' foods!

Toast with cream cheese and marmalade.This would be super on a toasted bagel with cream cheese,or on pork,or biscuits.

Muebe called it: Salsa Verde add some white onion and jalapenos. When chilled add some sliced green onion and cilantro and a spritz of lime.......Taco time :P :P
