Title: Workweek Roast Beef and Veggies in Fagor Pressure Cooker

Windchill temp this morning was -9F. So I wanted roast beef and veggies for dinner. My dearest went to the market after work and got a 5 lb. boneless chuck roast, and I had to meet with a contractor. At 5:45 she started chopping veggies and I browned the roast and then the mushrooms, threw everything we wanted into the cooker, which included onions,garlic,parsnips,carrots, and baby bella mushrooms. At 7:00 we were eating! When it gets cold outside....too cold to grill, I love my pressure cooker! It can take a hectic day from hell and put a warm, wholesome meal out in minutes!

I wasn't expecting the chuckie to look like that. Never cooked with a pressure cooker before. Just excellent!

That looks really good!  We too love to use the pressure cooker when time is tight, but we want that low/slow cooking effect, but in a short amount of time.

Most excellent cook, I love my pressure cookers. I'm making some unstuffed cabbage rolls in mine tonite. My mil made up this recipe and it only works with a pressure cooker. Just chop up some cabbage in good size pieces about an inch. Them mix hamburger with a can of diced tomatoes, the ones with peppers in them work real well. Add about a cup of minute rice, salt and pepper and, a small can of tomato sauce, it should be soupy. Layer the cabbage in bottom of cooker with salt, then add meat mix on top and then the rest of the cabbage. Add a can of tomato sauce on top of mix. You can add water to the cooker but I use V-8 juice. Salt and pepper the top, cabbage takes more salt than u think. Cook 15 lbs pressure for 25 minutes, release and enjoy. I use red wine vinegar or sour cream on top.
Tastes just like stuffed cabbage rolls.  In just 45 minutes.  Pam

Sounds like a nice cold weather meal Pam. I'll give it a try soon!

I know this is an old post but I was looking for a way to cook a bottom round and this very helpful. Both of your post were great and I copied them for a later PC cook. How long did you cook the roast?

That explains it, I didn't even look at the dates of the original post and when I read that it was -9 with windchill, I was wondering WTF is he. :o

Just saw your post RAD. That was a 5 lb. boneless chuck roast so it cooked for 55-60 minutes.
