Title: Brazed Short Ribs of Beef!

I have some very meaty short ribs that I want to braze with onions, garlic, red wine, carrots and fennel.  What I'm thinking is to season the ribs over night and then char them on the 4 burner RED before the brazing process.  Any great idea's?  I'm going to do this on the weekend.  Help me create.  Phil

Depends on what you mean by "char".  There is a significant difference between grilled or smoked food and charred food.  Sorry to be a wet blanket but I recomment reading http://www.sciencedaily.com/releases/2009/04/090421154327.htm
