Merguez (Spicy sausage)
It is time to do some Merguez . it is a north africa fresh sausage  . spicy sausage made of mutton or beef i did it with beef and fresh coriander .
this time i gave them a light  smoke .
some we did on the grill and served with flat bread and tahini .
some we did for breakfast fried with eggs.

Oh yes, those look fabulous.  My son & I love spicy sausages. What spices are typically in them?

For
1 kg of meat
1 cup fresh coriander
1/2 cup sweet paprika
4 tbsp ground fennel seeds
4 tbsp  ground cumin
2 tbsp  ground coriander seeds
2 tbsp salt
2 tsp ground cinnamon
2 tsp  cayenne pepper
1 ½  tsp black pepper
6 tsp  harissa OR chili paste
(if you smoke it add cure #1)

harissa
•   12 to 15 dried red chili peppers (approx. 1 1/2 oz. or 100 g)
•   3 or 4 cloves garlic
•   1 teaspoon salt, or to taste
•   1 teaspoon ground cumin (optional)
•   1/2 teaspoon ground coriander seeds
•   1/2 teaspoon ground caraway seeds (optional)
•   2 to 3 teaspoons lemon juice
•   olive oil

The banana I am having for breakfast just doesn't cut it after seeing this post.  I need to check the freezer to see if I have anything similar to your breakfast picture.  Will be bookmarking this one for later.

I do . it enhance the flavour .
