I needed to come up with something to do with a package of beef top round, as wally world labels it "thin sliced for Milenesa" so I mixed up a dredge of 2 parts flour, 1 part corn starch, kosher salt, pepper, paprika, and some Texas Roadhouse Steak seasoning. Then I cut the meat into quarters and whipped up an egg wash with eggs and milk, soaked the meat while I was cutting up the Brussels sprouts and Yukon golds for a hash. drained the egg wash and dropped the meat into the flour mixture while the fry daddy heated up along with the skillet for the hash. I fried the meat up in small batches that only took about a minute to finish. We ate some tonight with the hash and I saved the rest to make an orange beef on rice dish tomorrow with the leftover meat.

If I'd had a little more time I would have whipped up a quick pepper cream gravy to go with it, maybe next time.
